Veal with avocado, prosciutto and cheese

Veal with avocado, prosciutto and cheese


  • 4 veal leg steaks
  • olive oil, for brushing
  • salt and pepper to taste
  • 8x slices of proscuitto
  • 2x avocados, halved, peeled and stone removed
  • 3/4 cup grated low fat mozzarella
  • steamed vegetables, to serve


  1. Heat a large non-stick frying pan over high heat.
  2. Brush the veal steaks with oil and sprinkle with salt and pepper.
  3. Cook the steaks in batches for 1-2 minutes each side, the remove and cool slightly
  4. Take each avocado half and place cut side down on a board.
  5. Slice into disagonal pieces (wedges), keeping the tip of the avocado intact. Press lightly in the middle of the avcado and flesh will come out
  6. Wrap two slices of proscuitto around each steak then carefully top with an avocado 'fan'
  7. divide the grated cheese over the steaks
  8. Place under a preheated hot grill and cook until the cheese is melted
  9. Serve immediately with steamed vegetables
